ATTACK OF THE MUFFIN
Hello lovely people,
I want to take this opportunity to share my all time favorite muffins (actually there is two) baked by none other than my dearest mum. My job of course is contributing my tummy to eat. The aroma spread through the house without fail whenever the muffin is halfway baking in the microwave.
It is even more delicious to eat it hot from the microwave with a cup of tea or coffee. For me, I don’t take coffee or tea; I change it to a cup of freshly squeeze orange juice. This is heavenly prefect for breakfast or high tea or supper.
What happens the next day?
Well, can heat up using microwave or latest invention… Cheng Cheng Cheng, the airfryer (since no one pay me for advertisement, I am not quoting any brand then). Since it is a home bake muffin, it is advisable to consume within three days. Experience once, on the fourth day, there is a small spot of mold grow at the surface of the muffin.
The recipe
Chocolate Chips Muffin
250 g butter
220 g sugar
6 eggs
500g self-raising flour - sift
250ml milk
Step 1:
Ingredient A
Beat butter and sugar until fluffy
Step 2:
Separates eggs white from egg yolks
Add egg yolks into A, slowly add in flour and milk
Step 3:
Beat egg whites until foam, add in to batter A, add in chocolate chips.
Preheat microwave at 180 degree for 24 minutes
Line the baking mold with muffin cup. Scoop the batter in until equal level with the muffin cup.
After bake, use a ‘rojak’ stick to pierce through the center and it needs to come out clear or observed with eyes where the upper part of the muffin look brownish and ‘crack’ open. This means the muffin is fully cooked.
